Grilled Eggplant PaniniLet’s clarify something: I’m not a vegetarian, I love my meat and most of all my seafood, but I love vegetables as well and I don’t mind if I don’t have any kind of meat in a meal. What I’m about to say will sound a bit strange but since I moved to England, if I order a mushroom risotto or a vegetarian pizza while in a restaurant, people would ask if I am a vegetarian. I had to get over it and just keep saying ‘I’m not a vegetarian but I love vegetables.’

In fact, it’s so strange to me how people here (in UK) are not satisfied with a meal unless they have their beloved MEAT! In Italy it’s a totally different story: we can live for days or weeks on tomatoes caprese salad, spaghetti garlic and olive oil (spaghetti aglio e olio), parmigiana di melanzane, pizza margherita, and so on… and be totally happy with our meal without missing meat or feel we are becoming vegetarians. I guess this may be because we are lucky enough to have a variety of beautiful products so we don’t feel any missing in flavour in our vegetarian dishes. Having said so I still love vegetables and still cook some vegetarian dishes for myself when I fancy it 😉
Apart from vegetables, one thing I really love is a nice sandwich. Since I was little my mum would cook me a nice meal, and I would just stuff everything on the plate into a nice bread roll, wrap or bun. I guess I haven’t changed much 🙂 I love to mix flavours and combine everything into a ‘meal to go’ such a panini.
This sandwich is so full of flavour that, I promise you, you won’t miss meat, in fact it would be an interesting try for you if you are not a vegetarian, to realise that you can have a perfectly balanced tasty lunch without having to eat meat.

  1. 1 80gr Panini
  2. 1 tbsp Ricotta cheese
  3. 30gr light Mozzarella cheese
  4. 10gr light Feta cheese
  5. 1/2 Eggplant
  6. Rocket Leaves
  7. Salt/Pepper to taste
  1. Cut the Eggplant in 1cm slices, grill them for a few minutes then sprinkle salt and pepper on top.
  2. Spread the ricotta cheese on both sides of your panini, add the grilled eggplants, the rocket leaves, the feta cheese and the mozzarella.
  3. Grill your panini until the cheese has melted.
  4. Buon Appetito :D
