Yogurt Apple Pie

You are going to love this Yogurt Apple Pie because it’s the perfect treat if you want to eat a dessert without worrying of cheating on your diet! The reason is that you are going to bake it without butter …

… yes, you heard me… no butter! The good news is that this cake is extra moist because of the apples and the yogurt that you are going to use as a substitute for the butter.

Now, I have to be honest, this recipe is not really mine, it’s my mum’s. Suffering of high colesterol and not being able to have butter but still loving cakes, my mum has started to experiment many different ways to have a sponge that could be moist but still healthy.

Well, I can tell you that even not having problems eating butter, you will still be a big fan of this cake and will not feel guilty after having a slice… great, isn’t it??

You will also find this cake extremely easy to prepare! You are only going to need a food mixer, a bowl and 5 main ingredients: eggs, flour, sugar, apples, yogurt.. plus some baking powder and vanilla extract (optional) if you like that extra taste.

I have used fat free greek yogurt because I love the creamyness and the moist texture it transfers to the cake with just few calories and no fat! My mum uses just any low fat yogurt, sometimes a banana flavoured one, to add that extra tase. I personally prefere just to use a white yogurt and add a tea spoon of vanilla essence to the cake batter.

Regarding the apples, when I first had to bake this cake, I had no idea which apple was the best for baking. I went to the market, with my shopping list, just with the idea of buy apples…but looking at all those different apples on the stands I realised I was completely clueless about apples. What I did was just ask the market handler which apple he could suggest was the best to bake in a cake. He suggested these great Bramley apples, and I have to say he was right, the cake turned out lovely and super moist as the apples were just perfect for baking!

Now the Pie is perfect on its own but i know how the English love custard so here i show to make some gorgeous low calorie custard as a side.

That apple pie looks amazing! I don’t bake a lot, but I also love to use good yogurt when doing so. Not only does it add a wonderful rich flavor, it also keeps things moist without adding a lot of calories. Btw, your chive and prosciutto rolls also looked tasty….I’m a big fan of rocket….and prosciutto…and cheese lol 🙂 Great website, look forward to seeing more of your creations. Cheers!
